This is the saffron claim you are most likely to have seen on the internet, usually attached to a photograph of someone's waistline. It is also the one where the research is most often quoted selectively — so here is the whole of it, including the parts that do not sell anything.
The trial everyone cites
In 2010, Gout and colleagues published a randomised, double-blind, placebo-controlled study in Nutrition Research. Sixty mildly overweight, healthy women took a saffron stigma extract or placebo for eight weeks, with no restriction on what they ate. The saffron group snacked significantly less often, and lost significantly more weight than placebo. It is a real trial, properly designed, and it is the origin of nearly every "saffron for snacking" claim you will read.
A 2017 trial by Abedimanesh and colleagues in patients with coronary artery disease pointed the same way: 30 mg a day of saffron extract reduced self-reported appetite and measured energy intake over eight weeks, with saffron outperforming crocin alone.
The results that pull the other way
Now the other half. In 2019, Akhondzadeh's group ran a twelve-week trial in seventy-three overweight women who also had mild-to-moderate depression. Saffron clearly improved their mood. It had no significant effect on food craving at all.
And in 2022, Tahmasbi and colleagues pooled twenty-five randomised trials in Phytotherapy Research. Across all of them, saffron produced no statistically significant change in body weight, BMI, waist circumference or hip circumference. The single measure that did move was waist-to-hip ratio.
A 2023 trial in obese, prediabetic adolescents found saffron did reduce weight and BMI against placebo — but noticeably less than metformin did.
How to hold both of these at once
The honest reading is not "saffron works" or "saffron doesn't". It is that a specific standardised extract, at a specific dose, in a specific group of people, reduced snacking episodes — and that when you average every saffron trial ever run, the effect on the scale disappears.
There is a plausible thread connecting them. Saffron's most reliable finding anywhere in the literature is on mood, and a great deal of snacking is not hunger. If saffron nudges the mood that drives the biscuit tin at 4pm rather than appetite itself, you would expect exactly this pattern: an effect in people who snack for emotional reasons, and nothing much on average.
What we will not tell you
That saffron is a weight-loss product. It is not, the evidence does not support it, and anyone selling it to you on that basis is quoting one paper and hiding twenty-five. What saffron is, on this evidence, is a spice that seems to make the hours around it feel a little steadier — and for some people that changes what they reach for.
