Ingredients: 500 g chicken, cut into pieces; 2 cups basmati rice, soaked 30 minutes; 1 cup thick yoghurt; 2 onions, thinly sliced and fried golden (birista); 2 tbsp ginger-garlic paste; 2 tsp biryani masala, 1 tsp chilli, 1/2 tsp turmeric; 15 Baby Saffron threads, bloomed in 3 tbsp warm milk; Handful of mint and coriander, chopped; 3 tbsp ghee, whole spices (bay, cardamom, cloves, cinnamon), salt

Biryani is where saffron earns its place at the centre of the table. Drizzled over the top layer before the final steam (dum), it streaks the rice gold and perfumes the whole pot. This is a weekend project worth every minute.

500 g chicken, cut into pieces
2 cups basmati rice, soaked 30 minutes
1 cup thick yoghurt
2 onions, thinly sliced and fried golden (birista)
2 tbsp ginger-garlic paste
2 tsp biryani masala, 1 tsp chilli, 1/2 tsp turmeric
15 Baby Saffron threads, bloomed in 3 tbsp warm milk
Handful of mint and coriander, chopped
3 tbsp ghee, whole spices (bay, cardamom, cloves, cinnamon), salt

Method

Marinate the chicken in yoghurt, ginger-garlic paste, biryani masala, chilli, turmeric, half the fried onions and salt for at least 30 minutes.

Parboil the rice with whole spices and salt until 70% cooked, then drain.

In a heavy pot, cook the marinated chicken in ghee until it's almost done and the masala is thick.

Layer the parboiled rice over the chicken. Scatter the remaining fried onions, mint and coriander, then drizzle the bloomed saffron milk unevenly over the top.

Cover tightly (seal with foil or dough), and steam on very low heat — dum — for 20–25 minutes.

Rest for 5 minutes, then fold gently from the bottom so the golden and white grains mingle. Serve with raita.

The saffron tip

Bloom 15 threads in 3 tbsp warm milk and drizzle it unevenly over the assembled top layer just before the dum. You want streaks of white and gold, not a uniform yellow — that's the mark of real saffron, not colour.
